Is there a practical way to build a space telescope without those diffraction spikes? Do diffraction apikes mess up a bunch of the math or make astronomers need to do more math?

It is possible, but spikes are a result of the structural design of most systems. They can be removed via some PSF processing and fourier based deconvolution, but its tricky because spikes can contain real photometric data
