I do my best to post a variation of fics on each day. Once I have an idea of how many submissions we'll have in total, I can better plan out how many fics will be posted and what those days will look like. Most fics tend to skew explicit or teen in fests, so I can easily put one or the other in every single day, then the rest gets shuffled around based on word count, ship, fandom, tags, etc.
