I hate that I can't use ; in my writing as much anymore because now people have associated it with ai and it genuinely bothers me

I just keep using it, and the same goes for em dashes – and if people want to associate it with AI, so be it, but I wish they remebered that AI was also trained on fics, so it's not strange that it uses semicolons and em dashes since fic writers did it first.
